This is my go-to snack (or dessert) when I’m craving something sweet. It it so rich and chocolatey that you can only eat half a serving at a time… Top it with some real whipped cream and it’s uber-delicous! I was scared to try it the first time I made it- and was shocked that there’s really no avocado taste….it’s just pure chocolate. And really a guilt-free dessert!
The process is simple….
Mash an avocado until it’s fairly smooth. Add it to a food processor, along with some cocoa powder, a smidge of salt, some vanilla extract and sugar (you can use agave or a sugar-substitute). Melt some chocolate chips (either in the microwave or on the stove top) and stir in some almond milk (or cream), blend well and add that to the avocado mixture and blend until it’s a smooth creamy mousse. Separate into single-serving cups, cover, and refrigerate for a few hours.

Single Avocado Recipe (2 servings)
1 avocado
1 tsp of agave (I use raw sugar)
1/8 cup unsweetened cocoa powder
1/4 tablespoon pure vanilla extract
1/8 teaspoon fine salt
1/8 cup (heaping) of semi-sweet chocolate chips
1/8 cup almond milk (I just use half-and-half)
