This is a SUPER easy dinner…and although “Stir-Fry” is in the name, this is not an Asian dish.
We are not big vegetable eaters here….but we all love Costco’s Stir-Fry Vegetable mix….even the kids will eat it!
And I prefer Costco’s Jumbo cooked tail-off shrimp for it’s simplicity- just thaw and heat through. No picking tails off (although the kids think that’s kind of fun).
And my last tip is whether you make your pesto from scratch, or even if you buy it in a jar, freeze the unused pesto in an ice cube tray. Once frozen, pop the cubes out into a freezer bag or freezer container and whenever a recipe calls for pesto, just thaw out what you need! How easy is that?
Pesto Stir-Fry Shrimp
Ingredients:
Stir-Fry Vegetable mix
Jumbo Shrimp
Pesto Sauce (1-2 Tablespoons)
Assembly is simple…..saute the vegetables until cooked, then add the pesto sauce and coat thoroughly. Simultaneously cook (or reheat if previously cooked) the shrimp. Add the shrimp to the vegetables and stir gently to coat with the pesto sauce. Serve immediately.
Variations:
We usually serve this with white rice. Although sometimes we serve it alongside fettucini alfredo or pasta with a simple butter and garlic sauce.
Sometimes we substitute chicken instead of shrimp.
Sometimes we saute the shrimp separately in garlic and butter and serve it separate from the veggies.
This dinner is very versatile….and very easy.
