Another “partial” make-ahead dinner.  This one is so easy and so yummy and perfect with a side of rice.   I used to make a big batch of this chicken to take camping with us when it was my turn to serve dinner to the crowd.  Just reheat and eat! 

Garlic Lime Chicken

1 t salt
1 t pepper
¼ t cayenne pepper
¼ t paprika
1 t garlic powder
½ t onion powder
½ t thyme
6 boneless skinless chicken breasts
2 T butter
2 T olive oil
4 T lime juice
½ c chicken broth

Instructions

  1. Mix together the first 7 ingredients.  Sprinkle lightly on both sides of the chicken breasts (or heavily on one side!). 
  2. Heat the butter and olive oil in a skillet.  Sauté the chicken until cooked.  Option 1:  When chicken is mostly cooked, add the lime and finish cooking.  Serve.  Option 2:  Remove chicken once cooked and add the lime and chicken broth to the pan drippings.  Heat thoroughly then pour mixture over chicken before serving.

 

Special Notes: 

Triple the first 7 ingredients and save for future use!

Use Option 1 if eating the same night. 

Use Option 2 if you are making in advance to allow the chicken to ‘marinate’ in the lime juice.
