I make this only once a year, usually for Easter, although I did make it as a camping breakfast one year when I had six adults to feed. It’s super easy, and so incredibly delicious!

This year I went extra heavy on the meat, adding 2 pounds of bacon and 1 pound of Jimmy Dean Sausage. YUM. The guys loved it! I made it in a 11×13″ pyrex baking dish. I don’t think it would have fit in a 9×11 baking dish!


Here it is:

Breakfast Casserole
10 large eggs
2 cups milk
4 cups bread cubes (1.5 packages of butter & garlic croutons)
1 tsp dry mustard
2 pounds of bacon or sausage or combination of the two
1 pound of grated cheddar cheese
1/2 pound of fresh mushrooms

Instructions:
Brown the sausage and/or cook the bacon, drain off excess fat. Set aside.
In a large bowl, beat the eggs. Add the milk, mustard and bread cubes (croutons). Add the meat, cover and refrigerate for 2 hours (or overnight).

When ready to bake:
Stir in 2/3 of the cheese.
Grease a 9×13 baking dish. Pour contents into dish. Top with sliced mushrooms and remaining cheese.

Bake at 350-degrees for 45 minutes. Let cool for about 10 minutes before serving.

Special Notes: you can also add potatoes, onions, or anything else you want!

And this makes a huge amount, there’s always leftovers.  Halve the recipe if you are making it for just your own family (and not as a potluck type dish).

We’ve been eating this on Christmas, too!!  So delish!
